Amount of free SO2 [mg/L] required to reach 0.8 mg/L molecular SO2 depending on pH.

Example for an addition calculation:

You have a barrel (60 gal) of wine, apH of 3.61, and have determined the free SO2 to be 12 ppm. Your target level at this pH is 51 mg/L to reach microbial stability. With a 10% sulfur dioxide solution (preparation see below), you will need to add 88.5 mL of that solution to your barrel.

How to make a 10% sulfur dioxide solution from KMBS:

Potassium Metabisulfite (KMBS) contains 57% sulfur dioxide. A 10% sulfur dioxide solution contains 100 g/L SO2.
